Ingredients:
- 8 strips bacon or 1 Lbs breakfast sausage, cooked and chopped
- ¼ cup Cheddar cheese, grated
- ¼ tsp salt
- ½ tsp pepper
- 4 servings of Lars’s Hash Browns
- 8 large eggs; scrambled, fried, sunny-side up, or poached
- butter or oil spray
- 4 large flour tortillas
- Lars’s Huevos Rancheros sauce
Procedure:
- Cook bacon or sausage, in large skillet or microwave till done. Transfer to paper towels to absorb excess grease; then cutting board and chop. Transfer chopped meat to medium mixing bowl.
- Grate cheese and add to mixing bowl. Add salt and pepper and fold everything together with spatula until well blended. Set aside.
- Prepare hash browns per instructions, set aside on plate.
- Prepare eggs, as desired, (see notes) set aside.
- Grease baking dishes with butter or oil spray
- Microwave tortillas for 30 sec. to improve elasticity.
- In center of each tortilla, place ¼ of the hash browns.
- On top of this spread ¼ of meat/cheese mixture.
- On top of this, layer two eggs or ¼ of scrambled eggs.
- Fold sides of tortilla together and tightly roll up the tortilla to make burrito. Spray oil or brush melted butter over top and sides of each burrito.
- Place burritos in baking dish.
- Pre-heat oven at 350° F.
- Bake burritos for 20 minutes.
- While burritos are baking, prepare Rancheros sauce per instructions.
- Remove burritos from oven, transfer to serving plate(s), pouring Rancheros sauce over each.
Advanced Preparation:
- Steps 1-11 can be done in advance and refrigerated till needed. Bring to room temperature before baking.
Tips, Notes, and Variations:
- When preparing eggs (Step 4), remember they will cook some more while burritos bake. I like preparing my eggs very soft so the yolks run when cutting into my burrito.
- For a change, substitute Lars’s Hollandaise Saucefor Huevos Rancheros sauce.
- Some people prefer their hash browns on the side, rather than in the burrito, that’s fine. For timing purposes, you’ll probably want to make the hash browns while burritos bake. Experiment and have fun.
