Ingredients:
- 2 egg whites
- 2 Tbs water
- 2 Tbs rum, spiced
- 3 firm bananas, sliced
- ½ cup brown sugar
- 4 Tbs butter
- 2 – 10 inch flour tortillas
- 1 cup Canola oil
Procedure:
- Whisk egg whites and water in small bowl for egg wash. Set aside.
- Add spiced rum to small bowl and set aside (see notes).
- Slice bananas and add brown sugar to medium bowl. Set aside.
- In a large skillet over medium heat, melt butter .
- Add bananas and sugar, sauteing with wooden spoon until sugar is dissolved.
- Remove from heat, pour in rum, return to heat and saute for 2 minutes.
- Spoon half the banana mixture onto one half of each flour tortilla, smooth out with spoon and fold tortilla over itself to make a half moon.
- Moisten edges with water and use fork to crimp edges together.
- Brush edges with egg wash and refrigerate for 1 hour.
- Brush tortillas with oil.
- In a large skillet, heat remaining oil over medium-high heat. Fry stuffed tortillas until golden brown on both sides. 4-5 minutes each side.
- Transfer to serving platter or warming plate. Pat of excess oil with paper towels, slice each tortilla in ½ to make quesadilla wedges.
- Serve warm with side dishes of powdered sugar, whipped cream, fruit composé, and ice cream.
Advanced Preparation:
- Steps 1 – 9 can be done in advance and refrigerated up to a couple days before cooking. They can also be frozen, returned to room temperature before cooking.
Tips, Notes, and Variations:
- If you don’t have spiced rum (i.e. Captain Morgan’s), you can make your own using one of Lars’s Holiday Mulled Spices Bags.
- This dish can also be grilled. Set grill to high and place tortillas on greased cookie sheet or aluminum foil on top of grill slats.
