Servings: 4 cups
Time: – Preparation: 3 Hours
– Refrigeration: Overnight
Equipment: chopping knife & board, 1 large cooking pot
Difficulty: Easy

Ingredients:

  • 3 cups chicken broth
  • 1 cup white wine
  • Turkey neck & giblets (no liver)
  • 2 carrots – sliced
  • 1 onion- cut in quarters
  • 1 Celery – sliced
  • 4 cloves garlic, smashed

Procedure:

  1. Combine all ingredients in a pot, cover and simmer for two to three hours.
  2. Strain and discard the solids
  3. Refrigerate overnight, remove any fat that has risen to top. Store until needed.

Advanced Preparation:

  • Everything can be done weeks in advance and even frozen and thawed when needed.
